Electrolyzed Reduced Hydrogen Water

With a strong commitment to animal welfare, all water provided to our cattle is specially prepared as electrolyzed reduced hydrogen water, made from 80% filtered water and 20% electrolyzed water.

The healthy and carefully raised condition of our cattle can be clearly seen by visiting the farm and meeting them in person.

As a result of this meticulous care, our beef achieves an exceptionally low fat melting point — far beyond that of conventional beef.

When placed at room temperature, the fat begins to melt almost immediately, the marbling gradually fades, and the surface develops a glossy, refined appearance.


- Freezing -

Delivering “Misui-Gyu” (Pure-Water Wagyu) at Its Finest

To preserve freshness, texture, and flavor, we employ an advanced electromagnetic resonance freezing technology.

After extensive testing, we established our proprietary freezing protocol:

“Fresh Lock Freezing”
Our commitment extends to the freezing process itself.
Immediately after cutting, the meat is frozen using our unique “Fresh Lock Freezing” method, which utilizes electromagnetic resonance technology to prevent cellular expansion and structural damage.

This minimizes drip loss — the primary cause of flavor deterioration — and allows the meat to be enjoyed in a condition as close as possible to freshly cut.

By combining cold air, uniform magnetic fields, and electromagnetic waves in a hybrid freezing process, we preserve umami components and maintain ideal texture.
